e.g. mole sauce and tejate. It is a dried and fully fermented fatty seed
of Theobroma cacao, from which cocoa solids and cocoa butter are
extracted. Cocoa has a very huge and long history and it is believed
that it was originated in 1500 BC in Central America. Over the years
